elBulli 2007 Makeability Survey

First: Thank you to everyone who's dropped by this blog! Please feel free to comment on the posts, make requests, etc. This project is turning out to be more fun than I had imagined and I'm happy to share it with my readers. Anyway...

The 2007 elBulli catalog  is a little less accessible than 2005 and 2006. 50 of the 126 recipes can be made in a reasonably well equipped kitchen in the United States.

There are a number of recipes that can be easily made with relatively inexpensive gadgets listed in the "Other" column. Two of them, the ice cream maker and the candy floss machine are common in thrift shops and yard sales here in the USA. Neither is especially expensive but they're not marked in green because I don't have either machine.

Here's the 2007 catalog. Recipe number and name are on the left. The following columns contain an X if the named gadget is needed. Rows marked in green are what I consider "make-able", that is they do not require a chamber vacuum, freeze dryer, Thermomix, Paco Jet, liquid nitrogen or some other oddball gadget.

Notation:

-LYO - refers to freeze drying or lyophilization. In many cases the ingredient being freeze-dried is available commercially.
-CRU - refers to the chamber vacuum.
-nitro - Yep, liquid nitrogen
