Here we are again. For the 2008 volume we have 43 out of 99 dishes "makeable" - almost 44% overall. The big "win" for the home cook in this volume are the last six morphings. The tail end of an elBulli style meal usually involved a tackle box full of what everybody else calls "petit fours"; elBulli's of course stretch the definition to the breaking point.
As always, recipe number and name are on the left. The
following columns contain an X if the named gadget is needed. Rows
marked in green are what I consider "make-able", that is they do not
require a chamber vacuum, freeze dryer, Thermomix, Paco Jet, liquid
nitrogen or some other oddball gadget.
Notation:
-LYO - refers to freeze drying or lyophilization. In many cases the ingredient being freeze-dried is available commercially.
-CRU - refers to the chamber vacuum.
-nitro - Yep, liquid nitrogen
