Morphings: 1204 Light Coffee and Chocolate Meringue Slice 2005
There's absolutely nothing weird in this morphing. It's just two little squares of coffee flavored meringue with a little chocolate cream in between.
The meringue is made from sugar, water, liquid and powdered egg whites and a little instant coffee.
Smooth the meringue into a silpat about 1 cm thick, then pop it into the oven for 90 minutes.
While the meringue was was baking/drying I made the filling. I heated some cream, added chocolate, a little water and more instant coffee. Fold together until the mixture is creamy and stuff it in a piping bag.
Turns out the meringue in incredible fragile. Fortunately like all the elBulli recipes it makes way more than you'll need.
Assembly was a snap. Just slice the meringue into squares, top half of them with a little coffee cream and set on the other squares.
How it tastes: Sort of an airy tiramisu.
