Morphings: 1212 Chocolate Coral 2005


There's almost nothing to these little guys.

First I melted some 60% chocolate in a vacuum bag at 45° C.


While it was melting I whizzed up some freeze dried raspberries and dusted circles on a Silpat. The recipe calls for making little mounds of the powder so the corals are more three dimensional. Online photos show them both arched and flat. I went with flat because it's cheaper.

I let the melted chocolate cool to about 33° C while stirring in a few more chips, poured it into a piping bag and cut a very small tip.


Then I piped little coral shapes into the circles of raspberry powder


And dusted the tops with more. Set 'em aside to crystallize and they're done!

How it tastes: Nice. The sweet raspberry contrasts nicely with the slightly bitter chocolate. They're incredibly fragile so you have to be really gentle when moving them.
