Pre Desserts 1802: Saint-Félicien and Kirsch Coin 2010-2011

 
I had a little crock of Saint-Félicien left from the Saint-Félicien Blini with White Truffle I made recently. It's delicious on it's own, but what the heck, there are elBulli recipes to be made.

These little guys start with the same mango discs that appear in the Mango and Black Olive Discs. The only difference is they dehydrate for 72 hours rather than 48. So yeah, this is a 4 day operation.




Once they're dehydrated...


Find a nice one and apply a few grams of Saint-Félicien.

Top with another disc and squash it down a little.


Carefully fold the gold leaf over the sandwich. This is much harder than it looks.


Flip it over add a drop of kirsch and enjoy!

How it tastes: Pretty good. The instructions in the elBulli catalog instruct the diner to enjoy the contrast of textures between the crispy mango discs and the creamy cheese.

The Books: El Bulli 2005-2011 - Yes, freakin' expensive. Check with your local library - they may well be "in the system" and available to be reserved.
