Fill small deep bowls with still mineral water (or tap water - it doesn't really matter).
Set the bowls in your freezer for about half an hour to 45 minutes. You want to get a thin layer of ice on top with still liquid water underneath.
One at a time take out each bowl and with a heated metal skewer poke 2 small holes at opposite edges of the ice. Dump out the water and put the bowl back in the freezer.
Mix a little mint powder and brown sugar together in a small airtight container. Add a little matcha tea powder to another container and set both aside until you're ready to serve.
Bring each pond to the table with the minted sugar and the match tea.
Now be quiet! Sprinkle a small spoonful of the mint/sugar on the ice and listen carefully. If your ice is thin enough it will sound just like walking on fresh crisp snow.
Sprinkle on a little matcha tea powder.
Crack the ice with a spoon and eat, mixing all the ingredients together.
