Snacks: 1576 Strawberry and Wasabi Biscuit - 2009
Here we have another example of poor copy editing in this series. The name of the recipe is "Strawberry and Wasabi Biscuit" but the recipe calls for raspberries. It's pretty hard to imagine a scenario where someone could miss this discrepancy but there you have it. Nevertheless...
The cold dry weather we've been having in Philadelphia seemed like a good opportunity to try some of the snacks that don't use Isomalt to help them resist humidity. This little biscuit is a perfect example.
Here's a bunch of freeze dried raspberries going into the Thermomix to be turned into raspberry powder.
I put a piece of plastic wrap over the top to keep the raspberry powder in the bowl and processed on Turbo for a few seconds.
Then I sieved the powder to remove the seeds and any remaining chunks.
The powder is then spooned onto the stencil to make little rectangles.
And lightly sprayed with water. I used a cocktail mister that would normally be used to apply Vermouth to a (very) dry Martini.
Then into the dehydrator for 24 hours. They're incredibly fragile when they come out. I broke a couple putting on the little dab of wasabi.
How it tastes: Wow. I love the taste of raspberries and strawberries but the billions of tiny seeds freak me out for some reason. These little guys, while kind of a PITA to make are pure essence of raspberry.

The Books: El Bulli 2005-2011 - Yes, freakin' expensive. Check with your local library - they may well be "in the system" and available to be reserved.
Freeze dried Raspberries (or strawberries) - easily found online and in some grocery stores
Wasabi - the real thing if possible
Thermomix
Dehydrator
Geo Corquanter Stencils
A scale that measures in grams
