Snacks: 1571 Sweetcorn Scarf 2009
This is another of the snacks that shows up in The Sorcerer's Apprentices where it appears under the name "Handkerchief", rightly abandoned given its rather globby appearance. Fortunately it's not only delicious but also easy to make if you happen to have a few hundred grams of the sweetcorn caramel powder left over from making 1578.
The first step is to fry up some sweetcorn. I used frozen but elBulli would likely have used canned sweetcorn; a product they had been working with for a couple years. You want the corn kernels to be slightly caramelized. I then drained them on a paper towel and chopped the kernels coarsely.
From there it's just assembly...
Lay some obulato squares on a Silpat. I have the Silpat on a heavy steel baking sheet to help conduct heat to the little scarves.
Then sift on the left over corn caramel from 1578.
A little Maldon salt.
And the fried corn.
They go into a 200°C oven for about 45 seconds. I had the baking sheet sitting directly on a Baking Steel to maximize heat conduction.
Then you just lift 'em off the Silpat and fold them into the scarf shape.
How it tastes: Excellent. Fun and easy to make. I should have applied a somewhat heavier layer of the sweetcorn caramel powder. There's about 240 grams leftover...

The Books: El Bulli 2005-2011 - Yes, freakin' expensive. Check with your local library - they may well be "in the system" and available to be reserved.
