At last! For the 2010-2011 volume we have 99 out of 181 dishes "makeable" - over half. There are some interesting "series" of dishes, e.g. with mushrooms (1753-1759) and a game series using hare, and various small birds (1785-1792)
Now that the surveys are complete, I'll make another pass to compile a table of the "makeable" dishes, arranged numerically by category (snacks, tapas, etc) with the ultimate goal of creating a several more or less full elBulli style meals. (And yes, correcting typos). I'll also be adding some of the machines I've called out in these surveys to my batterie de cuisine (I've already bough a dehydrator). When I do, I'll provide a list of recipes that specific gadget enables.
As always, recipe number and name are on the left. The
following columns contain an X if the named gadget is needed. Rows
marked in green are what I consider "make-able", that is they do not
require a dehydrator chamber vacuum, freeze dryer, Thermomix, Paco Jet, liquid
nitrogen or some other oddball gadget.
Notation:
-LYO - refers to freeze drying or lyophilization. In many cases the ingredient being freeze-dried is available commercially.
-CRU - refers to the chamber vacuum.
-nitro - Yep, liquid nitrogen
